APRICOTS POACHED IN CHAMOMILE TEA WITH VANILLA & HONEY

We're loving this Apricots Poached In Chamomile Tea With Vanilla recipe we've found by Tea Vibes' Blog: Spill The Tea. You can use Tea Vibes' very own Chill Vibes™ chamomile tea blend - infused with honey, vanilla, and bee pollen to create this delectable dessert. It'll be sure to transport you to a porch in the South on a cool Spring night. 

It's honestly the perfect dessert to make for just you, your family and dinner parties. Why? Because it's super easy and it's although it's simple, it's extremely sophisticated. Enjoy!

Recipe | super easy | 20 mins

• 2 cups of strongly brewed Chill Vibes™ chamomile tea by Tea Vibes
• 3/4 of a cup of sugar
• 1 vanilla pod split and seeds removed
• 750 – 800g halved apricots with pips removed

Bring the tea, sugar and split vanilla pod to a boil and allow to simmer for about 5 minutes then add the fruit. Apricots (especially very ripe ones) poach very quickly, so you will need to cook them for a maximum of about 3 – 5 minutes. Remove the apricots with a slotted spoon and set aside. If you leave them in the boiling syrup they will turn to mush. Allow the syrup to cool and serve either warm or cold with ice cream.

P.S. - if you're not super fond of chamomile... I have found that the sweet nectar undertones of rooibos tea are a beautiful substitute. Tea Vibes has 2 dessert teas that are actual rooibos and the great thing is .. there is no caffeine. Vintage Vibes is a salted caramel rooibos tea with molasses and vanilla. Then there's Unicorn Vibes which is a vanilla berry citrus sweet rooibos. Vintage Vibes will be more of a comforting balance with the apricots and Unicorn Vibes will make the recipe a bit sweeter and brighter. Let me know what you decide to do!
